Recipe for salted matzo brittle
Serves 8
6sheets matzo2cups sugar½cup water2tablespoons butter, cut upCoarse sea salt (for sprinkling)
1. Line 2 large baking sheets with parchment paper. Spread the matzo on the sheets.
2. In a saucepan, combine the sugar and water. Cook over medium heat, stirring once or twice, until the sugar melts. Turn up the heat and continue cooking without stirring for 8 minutes or until the mixture turns amber. Stir in the butter. Continue cooking for 1 to 2 minutes or until the mixture is a deep caramel color.
3. Immediately, pour the caramel evenly over the matzos. Use an offset spatula to quickly spread the caramel. Sprinkle lightly with salt. Set aside to cool and firm.
