The company behind the Chicken & Rice Guys, the popular purveyors of halal chicken, has officially opened a brick and mortar Downtown Crossing location — albeit a couple months late.

The store, which replaces Cheeseboy at 280 Washington St., was slated to open in late January but appears to have officially opened on Monday. The store had a soft opening this weekend before a “grand hatching” Monday, according to a Facebook event.

The company made a reference to the pushed-back opening date earlier this month in a Facebook post, noting, “The process has been like a Russian nesting doll, with more challenges continually revealing themselves.” In February, a post said that “permitting approvals have been a moving target.”

However, that didn’t seem to damper the spirits of loyal fans Monday: The company posted a photo to its social media channels of patrons lined up outside the restaurant for the opening.

Chicken & Rice Guys founders Ian So, Jenny Giang, and Kevin Lau started the company in 2012, serving up a menu including halal-style chicken, rice, lamb, and tofu items.

Since then, it has grown from a single food truck to five, along with several brick-and-mortar stores (their third location opened on Harvard Street in Allston last year, and Downtown Crossing makes the fourth storefront for the Guys).

If all that sounds like the company is expanding rapidly, that’s because it is: Inc. Magazine reports the company is among the fastest growing in Boston and in Massachusetts, too.
