Winter Recipe Series: Chocolate Tart

Ingredients Yields 1 tart Tart Dough ½ cup sugar 8 oz. butter, softened 2 yolks ½ tsp salt 2 cups AP

Chocolate Ganache for Tart Filling 4 oz yolks 4 oz sugar 8 oz milk 8 oz cream ½ ea. vanilla beans 1 pound chocolate ½ tsp. cinnamon, ground

Directions to make the tart Cream together the butter and sugar. Add yolks and mix to combine. Fold on flour and salt and let chill. Press into tart shell and chill. Bake at 325 F until golden brown.

Directions to make the chocolate ganache Scald milk, cream, sugar, vanilla and cinnamon. Temper into yolks and put back on low heat until slightly thickened. Pour over melted chocolate and stir to combine. While still warm, pour into tart shells. Let set up 4+ hours in the refrigerator.
