Recipe for potato tortilla
Serves 4
Olive oil (for the dish)1tablespoon olive oil 1onion, thinly slicedSalt and pepper, to taste1cup roast potatoes, coarsely chopped6eggs
1. Set the oven at 350 degrees. Lightly oil an 8-inch square baking dish.
2. In a large skillet over medium-high heat, heat the 1 tablespoon oil. Add the onion, salt, and pepper. Cook, stirring often, for 15 minutes or until it is beginning to caramelize. Stir in the potatoes.
3. In a large bowl, whisk the eggs. Add the onion mixture and stir well. Pour into the baking dish and transfer to the oven. Bake for 20 minutes or until eggs are set in the center and the top is lightly browned.
4. Cool for 5 minutes before serving. Serve warm, or at room temperature (nice as next day’s lunch too). Karoline Boehm Goodnick
