Recipe for smoky scallion mayonnaise

Serves 4 with leftovers

1cup mayonnaiseJuice of 1½ lemons1½teaspoons smoked Spanish paprika, or more to taste1bunch scallions, finely choppedSalt and pepper, to taste

1. In a bowl whisk together the mayonnaise, lemon juice, smoked paprika, scallions, salt, and pepper. Taste for seasoning and add more salt, pepper, or paprika, if you like.

2. Set aside ¼ cup of the mayonnaise for the hash. Serve the remaining with the stuffed potatoes. Sydney Oland
