Recipe for common cracker stuffing
Makes about 8 cups
Prepare this as a side dish or stuff it into an 18-pound bird.
Butter (for the pan, if using)10ounces common crackers, crumbled3cups boiling water1large onion, finely chopped2eggs6tablespoons butter, melted2teaspoons poultry seasoning2teaspoons salt½teaspoon pepper
1. Set the oven at 375 degrees. Butter an 8-inch square baking dish, if making as a side dish.
2. In a large mixing bowl combine the crackers and boiling water. Stir well and set aside, stirring occasionally for at least 30 minutes.
3. Stir in the onion, eggs, butter, poultry seasoning, salt, and pepper.
4. Spoon the stuffing into a turkey and bake according to the turkey’s weight. For a side dish, transfer the stuffing to the baking dish and smooth the top. Bake for 30 minutes or until the top is brown. Adapted from G.H. Bent Co.
