Recipe for spicy peanut noodles
Serves 4
4tablespoons beef marinade 6tablespoons natural peanut butter 1tablespoon dark sesame oil1piece (1 inch) fresh ginger root, finely chopped2teaspoons chili-garlic sauce (such as sriracha), or more to taste 3tablespoons hot water12ounces dried linguine1cup frozen peas, rinsed with cold water until thawed1cup cooked steak4scallions, thinly sliced½cucumber, seeded and cut into ½-inch dice¼cup roasted unsalted peanuts, coarsely chopped¼cup chopped fresh cilantro
1. In a large bowl, whisk together the marinade, peanut butter, sesame oil, ginger, chili-garlic sauce, and hot water.
2. Bring a large pot of water to a boil over high heat. Add the linguine and cook for 8 minutes or until the noodles are tender but still have some bite. Drain into a colander.
3. Add the noodles, peas, and steak to peanut sauce; toss well.
4. Spoon the noodle mixture into each of 4 bowls and top with scallions, cucumbers, peanuts, and cilantro. Sally Pasley Vargas
