Recipe for green and red cabbage, kohlrabi, and fennel slaw
Serves 20
1head green cabbage, quartered and very thinly sliced1head red cabbage, quartered and very thinly sliced2heads fennel, halved and very thinly sliced3kohlrabi, peeled, halved, and very thinly sliced3carrots, shredded2bunches scallions, thinly sliced1bunch cilantro or parsley, coarsely chopped1cup mayonnaise1cup rice wine vinegar4tablespoons sugarSalt and pepper, to taste
1. In 2 large bowls, divide the green and red cabbages, fennel, kohlrabi, carrots, scallions, and cilantro or parsley.
2. In another bowl, whisk together the mayonnaise, rice wine vinegar, sugar, salt, and pepper. Divide the dressing between the bowls. Toss well. Cover and refrigerate until serving. Catherine Smart
