Recipe for pita with ground lamb kebabs

Serves 4

2cucumbers, peeled, halved lengthwise, seeded, and thickly sliced4medium tomatoes, cut into ½-inch wedges½sweet onion, cut into thin wedges¼cup chopped fresh mint leaves2tablespoons olive oil2tablespoons red wine vinegarSalt and pepper, to taste¾cup tzatziki sauce4pita rounds (about 6 inches each), cut in half4lamb kebabs, thinly sliced on a diagonalExtra fresh mint leaves (for garnish)

1. In a bowl, combine the cucumber, tomatoes, onion, mint, olive oil, vinegar, salt, and pepper.

2. Spoon tzatziki sauce in each pita pocket. Add lamb, a large spoonful of cucumber salad, and more mint. Lisa Zwirn
