8 delicious ways to deck out your toast

The cofounder of Boston-based Mother Juice on what makes a good mash.

Toast is far more than a breakfast side. Ever since health nuts started topping it with avocado, a food craze was born—and people all over the country started waiting in line for creamy, ripe avo mash spread across crisp bread. But at Mother Juice—a cold-pressed juice joint that dabbles in other healthy eats—avocado is just the beginning of toast toppers.

So if you’re sick of the green goddess, or just looking for a few ways to spice up your already delicious mash, you’re in luck. Laura Baldini, cofounder of Mother Juice, which is scheduled to open a new location at 291 Newbury St. on Friday, shared eight fresh toast variations (all of which will be available at the Newbury shop). Order them there or whip them up at home. Happy munching!

Original Avocado Toast

Original Avocado Toast
Avocado mash, sesame seeds, local cherry tomato

Combine a smashed avocado with the juice of 1/2 lime and a pinch of sea salt in a bowl, and spread over toasted Udi’s Gluten-Free Millet-Chia Bread. Top with 1/2 tablespoon sesame seeds and two cherry tomatoes sliced in half.

Some Like It Hot
Avocado mash, Vermont maple Sriracha, spicy nuts from Q’s Nuts

Combine a smashed avocado with the juice of 1/2 lime and a pinch of sea salt in a bowl, and spread over toasted Udi’s Gluten-Free Millet-Chia Bread. Top with a drizzle of Vermont maple Sriracha and a small handful of nuts.

We Got the Beet
Avocado mash, shredded beets, scallions, radish, local spicy Sriracha, drizzled honey from Boston Honey Company

Combine a smashed avocado with the juice of 1/2 lime and a pinch of sea salt in a bowl, and spread over toasted Udi’s Gluten-Free Millet-Chia Bread. Top with 1/4 cup of shredded beets, one sliced scallion, a thinly sliced radish, and drizzles of Sriracha and honey.

Sun Butter Toast
Sunflower seed butter, banana, chia seeds, local honey

Spread 2 tablespoons of seed butter over toasted Udi’s Gluten-Free Millet-Chia Bread, arrange slices from a banana, top with 1 tablespoon chia seeds, and drizzle honey.

Avocado mash, shredded carrots, one scallion (use scissors to snip into 1/2-inch pieces), whatever fresh dressing you have on hand

Combine a smashed avocado with the juice of 1/2 lime and a pinch of sea salt in a bowl, and spread over toasted Udi’s Gluten-Free Millet-Chia Bread. Top with a small handful of shredded carrots, scallions, and a drizzle of whatever fresh dressing you have available. Mother Juice’s housemade ginger tahini dressing can be made by blending tahini, fresh ginger, lemon, salt, and pepper.
