A new brewery is all set to make beer in Framingham

Exhibit ‘A’ plans to make Kolsh, IPA, and coffee brews.

A new Framingham brewery is officially set to start making beer.

Exhibit ‘A’ Brewing—which took over the old Jack’s Abby brewing space at 81 Morton St. in Framingham—now has their alcohol license from the state. This means they’re all set to start brewing, Matthew Steinberg, co-founder and brewmaster, said.

Steinberg plans to brew up a Kolsh beer to start, which is a style he personally loves as a traditional and pure beer.

“It can be described as easier to drink, but that’s not my motivation,” Steinberg said. “It’s more about the majestic character that a Kolsh can bring.”

Exhibit ‘A’ will also offer IPAs, as well as a series of coffee beers that will deviate from the usual porter or stout styles. Steinberg thinks that strong coffee porters are delicious, he said, but that there’s “a lot of room to experiment” when it comes to adding coffee beans.

Steinberg will collaborate with at least two local coffee roasters for the series that, blended with their local malts from Hadley, will add a local feel to the brews. He plans to work with Barrington Coffee Roasting Company and Share Coffee Roasters. Share focuses more on lighter roasts and takes freshness very seriously; they’ll roast coffee beans for a specific customer’s order and deliver them.

Exhibit ‘A’ will be able to start brewing later this week. But Steinberg said they won’t have beer available to the public until later this summer. He expects the brewery to open in mid-August. A few folks have already stopped by the space to see if they’re open, Steinberg said, having heard about the new business from Jack’s Abby.

Though they may be known as the brewery in the old Jack’s Abby space, Steinberg says the established brewery is helpful, not a hindrance, for his new venture.

“We definitely see them as a support structure in the Framingham beer scene,” he said. “They created it and really made a name for themselves, and that created a destination.”

And Steinberg hopes his brewery is a destination. Exhibit ‘A’’s model is based on people visiting the brewery, where they can get tastings, full pours, half pours, and beer to go in growlers and cans. They’ll have lots of options, too—Steinberg already has 14 different beers planned for Exhibit ‘A’’s first year.
